What SAPP Is
Disodium pyrophosphate (sodium acid pyrophosphate, SAPP, E450(i)), CAS 7758-16-9, is a white crystalline powder that dissolves readily in water. A 1% solution has a pH of 3.5–4.5. Food-grade material is supplied at ≥95% purity, with grades reaching ≥98% available.
Most food-grade demand falls into four areas: controlled leavening in baked goods, colour retention in potato products, struvite prevention in canned seafood, and moisture management in processed meats.
Functions
Leavening. SAPP reacts with sodium bicarbonate to release carbon dioxide. Most of the gas is released during baking, not during mixing or bench time. SAPP 28, the most ordered grade, suits cakes, muffins, pancakes, and biscuits. SAPP 40 offers a faster reaction rate for donuts and similar uses.
Colour retention in potato products. A dilute SAPP solution (0.3–0.8 wt%) in the blanching step chelates ferrous ions, stopping the blue-grey discolouration caused by iron-chlorogenic acid complexes. This is a standard step in frozen French fry production.
Struvite prevention in canned seafood. During retort sterilization of tuna, crab, and surimi, SAPP sequesters magnesium ions released from the raw material, preventing hard struvite crystals that consumers can mistake for foreign matter.
Moisture management in processed meats. In hams, sausages, and nugget-style products, SAPP is used in phosphate blends to improve water-holding capacity, with direct effects on cooking yield, sliceability, and texture.
